TWEET'S TRAVEL TREATS

Tweet Brumaghim’s favorite hobby is cooking. She has put together 3 fundraiser cookbooks and is writing her own cookbook. Tweet lives in Southern California with her husband, Rex Edmonds and their two cats, Scotty and Riley.

My cookbook collection has grown quite a bit this winter. What fun I have had reading them and marking the recipes I must try! The following are some of the ones we liked and will prepare again:

EASY SCALLOPPED POTATOES

  • 6 large potatoes, peeled
  • Margarine or butter
  • Seasoned Salt
  • Flour
  • Milk or non-dairy creamer

Wash, peel and slice the potatoes into 1/4-inch slices. Grease a casserole dish (medium size). Put one layer of potato slices in the bottom. Sprinkle with a little seasoned salt. Then sprinkle with a little flour. Put about 4 to 8 dabs of margarine or butter on top.

Repeat layers until you are about 1-1/2 inches from the top of the casserole dish. On the last layer on the top, do not dust with flour, use only the salt and margarine/butter.
Then from the side or the corner (but not over the top) fill the casserole with milk or non-dairy creamer, until you can see the milk come up on all sides. The liquid should be about 1/2 inch below the top layer of potatoes.

Bake at 325 for 1 to 1-1/2 hours, covered. The last few minutes remove the cover and let it brown. I put a cookie sheet on the rack below the casserole to catch any spills. Serves 4 to 6
